I wish I’d know years ago how easy it is to make sauerkraut (kraut).
My Aunt Faye made the best kraut and kielbasa! I don’t know what her secret was. I cannot seem to duplicate her meal. I have the cast-iron skillet. I cut the kielbasa, fry it nice and crisp. I add the kraut and let it all simmer for an hour or so.

Well, one thing I have learned in my trial and errors is how to make my own kraut. It is SO easy! All you need is the cabbage, salt, and a container. Oh! Some form of weight to hold the cabbage down, under the brine. A weight could be a cup, a custard cup, anything food safe that will fit in the container and weighs enough to hold the cabbage down. I used a zip top sandwich bag full of dry beans once.
